So I know it's technically not March 2nd but it has been a busy night on call in the Pediatric ICU and I am just now getting to the blog (although I should probably be using the extra 10 minutes to nap). Regardless, in some part of the world it is still March 2nd so I am gonna go forth and post...
So I ordered a 1200 calorie limited diet on an obese little 4 year old today. Apparently that can consist of limited portions of mac n cheese, mashed potatoes and popsicles. This little one weighs as much as I did entering college. It's still unreal to me that even when we limit calories, it does not mean that the calories we DO eat come from good healthy sources.
So the theme of the month is RAINBOWS! The National Nutrition Month and American Dietetic Association have put together the Eat Right with Color campaign to get more variety in our diets.

Recipe of the Day: Monster Smoothie

Get the kids involved in making this smoothie—it's a wonderful way for them to get their serving of vegetables and fruits. The color may throw the kids off at first, but once they taste it, they’ll love it! With the greens, they’ll get an abundance of calcium, iron, and fiber.
6 cups fresh baby spinach or kale
1 1/2 cups fresh or drained canned pineapple chunks or pears
3 cups green grapes
1 1/2 bananas
1 1/2 cups water
1 1/2 cups ice
1 1/2 cups fresh or drained canned pineapple chunks or pears
3 cups green grapes
1 1/2 bananas
1 1/2 cups water
1 1/2 cups ice
Blend all ingredients together.
Add more ice for a thicker smoothie.
